At The Cut, located in The Rocks, premium Australian beef and the freshest sustainable seafood are prepared with care and cooked to order. At the heart of the menu is The Butcher’s Cut, a rotating selection that showcases The Cut’s distinctive ageing program, featuring dry, tallow and bourbon ageing side by side, each cooked over the woodfire grill. From refined small plates through to the full tasting menu, every dish reflects a modern Australian approach to the steakhouse experience.

The wine list brings together a curated selection of domestic and international labels chosen to complement the menu, alongside classic champagnes and signature cocktails, from lighter aperitif pours to bold, structured reds worthy of the occasion.
