From the ground up

Amy started as an apprentice in 2017 and worked her way through every section of the kitchen, Chef de Partie, Junior Sous, Sous Chef, Head Chef, before stepping into Research & Development. Few people in the business understand a dish from every angle the way she does.

From the floor to leading it

George joined as a casual waiter at The Bavarian in 2020. Within a few years he'd moved into management at Winghaus, and now runs the venue as General Manager.

A nose for the next step

Gianmattia joined Rockpool Bar & Grill as a Sommelier in 2021. He moved up to Assistant Sommelier before being appointed Head Sommelier, building one of the country's most respected wine lists along the way.
