Ananas Makes Sydney’s Hottest New Restaurants List

Gourmet Traveller runs a rolling list of the best new restaurants in Sydney. It covers the full breadth of the city’s dining scene and updates as venues earn their place. Ananas is at the top.
The French brasserie returned to The Rocks this year after a decade away. Same sandstone bones, smaller room, and a kitchen led by executive chef Mike Flood, who came via Felix. The format is classic brasserie: escargots, soupe à l’oignon, steak au poivre with frites. A dedicated Champagne bar at the entrance. A wine list running to between 800 and 1,000 bottles.
Cuisine de Saison
The more interesting story is what Flood is doing with the menu over the course of a year. He told Gourmet Traveller: “The menu draws from across France and shifts with the seasons. As we move towards spring, it lightens and leans south, with olive oil stepping in and dishes becoming brighter. The idea is familiarity and comfort, with moments of decadence when you want to dial it up.”
Winter means deep sauces, butter and richness. Spring brings lighter produce and southern French influence. The brasserie staples stay. What surrounds them shifts.

French classics, done with conviction. Rillettes de Crabe prepared tableside. Escargots baked with red wine and bone marrow butter. Bœuf Braisé Chasseur for the long evening. The Baba d’Ananas to close — rum-soaked savarin, finished at the table with house-infused pineapple rum.
